Always on the hunt for epic post-workout recipes, we teamed up with GRIT Rockstar Christine to find a new breakfast recipe to work into our repertoire.
Christine’s Favorite Acai Bowl:
Food fads come and go (we all remember the cupcake takeover or the juicing bonanza) – but the açai bowl is so much more than just a passing trend. It is like the Beyoncé of the breakfast world and you can quote me on that.
Breakfast has been deemed the most important meal of the day and what better way to start it off than with a bowl of customizable fun! You can add to the Amazonian berry base in whatever way your little stomach desires. Drizzle on almond butter, sprinkle on coconut shavings, or thrown some mango chunks in the mix. Each bite is a different combo of ingredients coated in sweet, thick açaí puree. And that’s what makes this super-food bowl so magical – you can get adventurous with your toppings (or your mix-ins) and play with different recipes. It’s like food crafting for adults.
Acai has been shown to promote skin health, improve mental functioning, and support weight loss (just to a couple of its BOSS benefits). So go to town on those colorful bowls – your heart and tummy will thank you!
Let’s do this:
Prep time: 10 minutes. Serves two.
Ingredients:
- 6 packs frozen acai sorbet (with protein or without)
- Teaspoon of greek yogurt
- 1 cup frozen fruit
- 1 banana
- ¼ – ½ cup liquid of your choice (water, coconut milk, almond milk, juice)
Toppings:
- Granola
- Sliced Strawberries
- Sliced Banana
- Sliced Kiwi
- Honey
- Coconut flakes
Instructions:
Add the acai, fruit of your choice, greek yogurt, and liquid to a blender. I used strawberry-infused açai with protein powder and water as my liqid. Blend on medium speed for 1 minute until a thick smoothie-like consistency is achieved.- Serve into two bowls and top with all of your favorite toppings. Enjoy with a spoon.
